Everyone needs a great cookie recipe, and this one is always a winner! Are you ready to impress all your friends? 😋

It takes just 15 minutes to prepare a batch of these extra SOFT and INDULGENT Peanut Butter Chocolate Chip Cookies! This sweet-and-salty combination gives these cookies all the comforting appeal of a traditional family recipe and is sure to become one of your weekly favourites.

Ingredients (makes 15 cookies) 🍪 (add a touch of matcha) :

  • ½ cup unsalted butter, melted
  • ½ cup creamy peanut butter
  • 1 cup light brown sugar
  • (1 tablespoon of Gastronomy Matcha)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1¼ cups all-purpose flour
  • 1 cup semi-sweet chocolate chunks or chocolate chips. We love using milk chocolate chunks, but you can choose dark chocolate for a more wholesome version.

For an extra-indulgent twist, we added pieces of Oreo and a sprinkle of fleur de sel. 😋

     Method:

      1. Before you begin, here is a useful tip: Try to work quickly while preparing the dough, as the warm butter will help the ingredients combine and give the cookies a deeper colour.

      2. Preheat your oven to 180°C.

      3. Cut the butter into 6 to 8 pieces and melt it in a microwave-safe bowl for approximately 45 to 60 seconds.

Pro tip: Cover the bowl with a paper towel to prevent splashes. The butter needs to be hot, so check it after you hear the first pop. If it has not completely melted, continue heating it in 5-second intervals until smooth.

      4. Immediately after removing the butter from the microwave, add the brown sugar and mix quickly on low speed for 10 to 15 seconds until thoroughly combined. Mixing the hot butter with the brown sugar is the secret to achieving that delicious caramel colour, so do not skip this step!

      5. Add the peanut butter and mix again on low speed for 10 to 15 seconds until evenly combined. Keeping the mixer on low, add the eggs, vanilla extract, baking soda, baking powder and salt. Now add the flour (and the matcha) and mix for another 10 to 15 seconds, just until the flour is fully incorporated into the dough.

      6. Add the chocolate chunks – or the Oreo pieces and fleur de sel! Allow the dough to rest for approximately 5 minutes so that it becomes less sticky.

      7. To give your cookies that irresistible homemade appearance, mix the dough again on medium speed after the 5-minute rest. Beat it for 20 seconds to incorporate a little air and help create that beautifully rich colour. Trust us, this step is your shortcut to soft-cookie heaven!

Now It Is Time to Bake:

      8. Line a baking tray with baking paper and shape the dough into balls. For an extra decorative touch, press a few additional chocolate pieces into the tops.

      9. Bake at 180°C for 10 to 11 minutes. The cookies should be lightly golden on top and still appear slightly underbaked. Ours were perfect after 10 minutes.

      10. Remove them from the oven and place the entire baking tray on a cooling rack. Allow the cookies to cool on the hot tray for 10 to 15 minutes before moving them. This allows them to finish baking on the residual heat of the tray. Once they have set, use a spatula to transfer them to a cooling rack.

Now all that remains is to enjoy them! 🌟 Feel free to share the results of your delicious creation with us. We would love to see your irresistible cookies, ready to be devoured! 🍪💖
